Rigatoni is a thick, short cut pasta that is traditionally paired with meaty, tomato-based dishes such as Ragu di Cervo, or even a classic Bolognese. In fact, Italians almost never eat these types of sauce with spaghetti or other long pasta, because they are absorbed much better by short cut pasta like Rigatoni.
Pasta from small artisan producers Rustichella of Abruzzo was recommended as the best durum wheat pasta in the world by Heston Blumenthal in his TV programme 'The Perfect Spaghetti Bolognese'.
