We source most of our durum wheat pasta from Organico, who work to strict ethical and fair-trade standards, supplying premium quality pasta that is totally organic. The pasta is produced by a ‘co-operativo’ working in the heart of a WWF nature reserve called Oglio Sud in the Po valley of Northern Italy. Durum wheat is stored and milled with great care to produce the highest quality pasta. The dough is mixed without heating and shaped using bronze plates to create a rough, porous surface that absorbs the sauce well. It is then dried at low temperatures over a long period, ensuring the gluten is not damaged and the pasta maintains its nutritional quality and taste.
We also source speciality pastas (such as Bucatini and Rigatoni) from Rustichella, a small artisan producer based in Abruzzo. Rustichella regularly wins awards and taste tests for their fine pasta, and count some of the country's finest chefs (like Heston Blumental of the Michelin starred Fat Duck) among their biggest fans.
