All of our oils are extra virgin and come from small producers working to traditional methods of organic and environmentally sound production. Italian olive oils tend to become more intensely flavoured the further south the olives are grown, largely because the longer, hotter summers lead to an earlier harvest of mainly green olives. So, Tuscan and Sicilian oils tend to be more intense than those from Liguria. The best guide to quality is the information the producer gives you – the more he is willing to tell you the more care he is likely to have taken with his oil. Look for those oils bottled by a single estate (rather than a blend) for the very best oils.
